organic creamy chicken soup recipe

It's the perfect mixture between convience food and high class cuisine. While thin crispy based pizza's followm traditional Italian recipes more closely, there are plenty of other recipes for more doughy thick bases.

ingredients (serves 4)

For the Sauce

30ml olive oil

1 onion finely chopped

1 garlic clove crushed

400g can of chopped tomatoes

15ml tomato puree

For the Pizza Base

275g cups plain flour

1/2 tsp salt

1 tsp easy blend dry yeast

2 tsp olive oil

For the Topping

1/2 a red, yellow and green pepper sliced into rings

150g mozzarella cheese

75g pepperoni sliced thinly

8 black olives, stones removed

3 sundried tomatoes chopped

1/2 tsp of fresh oregano

  1. Fry the onion and gralic in the oil until softened. Add the tomatoes and the puree. Boil repidly for five minutes until it begins to reduce. Leave to cool to a thick paste.
  2. Sift the flour and salt into a bowl. sprinkle over the yeast and make a well in the centre. Pour in 175ml warm water and olive oil. Mix to a soft dough. Knead the dough on a lightly floured surface for 5-10 minutes until smooth. Roll out into a circle and press up the edges a little and place on a greased baking sheet.
  3. Spread the tomato sauce over the base with the peppers, mozzerella, pepperoni, olives and sun dried tomatoes. Sprinkle a little chopped oregano and olive oil. Cover loosely and leave in a warm place for half an hour. Preheat the oven to 220c and bake for 25-30 minutes.
