organic creamy chicken soup recipe

It's one of the most comforting foods out there, and what I always ask for when I'm feeling a bit under the weather. A can of chicken soup might seem like the easy option but our simple creamy soup recipe takes no time at all to make.

organic cream of chicken soup

ingredients (serves 4)

15ml vegetable oil

1 garlic clove chopped

2 large chicken breasts

1/2tsp ground tumeric

1/4tsp paprika

75g creamed coconut

900ml hot chicken stock

2tbsp lemon juice

50g broken egg noodles

5 chopped spring onions

30ml dessicated coconut

a plash of cream

  1. Heat the oil in a large sauce pan, and fry the garlic until it begins to go golden. Add the chicken and spices, and stir fry for five minutes. Crumble the cream coconut into the stock and stir until dissolved. Pour the stock into the pan. Now add the lemon juice and egg noodles.
  2. Simmer for 15 minutes then add the spring onions and corriander.
  3. Fry the desicated coconut and use to garnish the soup.
