organic pasta carbonnara recipe
The classic roman pasta dish is nice and easy but simple to make look a million dollars. It's always worth opting for fresh tagliatelle, either from the local supermarket if your are feeling enthusiastic you can make it from scratch.

ingredients (serves 4)
450g fresh tagliatelle
15ml olive oil
225g of high quality organic ham, bacon or pancetta, cut into one inch chunks.
115g button mushrooms sliced.
4 eggs lightly beaten
75ml single cream
ground salt and pepper
30ml of finely grated Parmesan cheese
Fresh basil leafs to garnish.

- Cook the pasta in a pan of boling salted water with a litte oil added for 6-8 mintutes or until al dente.
- Meanwhile, heat the oil in a frying pan and fry the ham for 3-4 minutes then add the mushrooms and fry for another few minutes, turn off the heat and reserve. Lightly beat the eggs and cream together in a mixing bowl and add plenty of salt and pepper.
- When the pasta is cooked, drain it well and return to the pan. Add the ham, mushrooms and any pan juices and stir into the pasta.
- Poor the eggs, cream and half the Parmesan cheese. Stir well and as you do this, the eggs will cook in the heat of the pasta. Pile onto hot plates and drop on the leftover cheese.
