organic salmon with herb butter recipe
Farmed salmon has mean't it has quickly gone from being a luxury to an everyday staple. However be wary of farmed salmon, it has been bred to look good rather than taste good. If you do get wild salmon be sure to check it's from an ethical sustainable source.
organic organic salmon with dill herb butter
ingredients (serves 4)
50g of butter
finely grated rind of half a lemon
15ml of lemon juice
15ml chopped fresh
4 salmon steaks
2 slices of lemon halfed
4 fresh dill sprigs
salt and ground black pepper

- Place the butter, lemon rind and jucie, chopped dill and salt and pepper in a small mixing bowl and combine until thoroughly blended.
- Spoon thbe butter on to a piece of greaseproof paper. Roll the paper into a cylinder, twist both ends tightly wrap in cling film and place in freexer for twenty minutes until firm.
- Meanwhile preheat the over to 190c, cut out four pieces of foil big enough to contain the salmon steaks and grease lightly. Place each steak in the centre of the foil.
- Remove the butter from the freezer and slice in eight equal discs. Place two discs of butter on top of each steak along with a sprig of dill and half a slice of lemon. Lift up the edges of the foil and seal.
- Lift the parcels of foil onto a baking sheet and bake for twenty minutes. Serve on warm plates with the melted juices.
